During alcoholic fermentation, daily pumping over is carried out which favors an optimal extraction of aromatic substances and dyes. After racking, the start and progress of malolactic fermentation are carefully checked; once the latter is finished, the wine is decanted and raised in fine-grained oak barrels and medium-aged 300 liters for aging, which lasts for 12-14 months depending on the vintage. The woods used are 30-40% new and the remaining part of the second and third passage. Bottling usually takes place a year and a half after the harvest. Alcohol content: 14% vol. Organoleptic profile: ruby red with pleasant reflections purple and shades tending to garnet with aging, the nose is complex, austere, reveals fruity scents with light spicy and toasted notes well blended. In the mouth warm, dry, harmonious, with good structure and persistence, pleasant and round tannins on the finish.
