PIEDMONT DOC BARBERA An everyday wine to be rediscovered, a perfect companion for the table and the dishes of the Piedmontese tradition. Type of soil, exposure and altitude: calcareous - clayey, south-south east, 250 meters above sea level. Training system: espalier with guyot pruning. Production per hectare: 80 quintals. Vinification: alcoholic fermentation takes place in stainless steel tanks in contact with the skins for about ten days at a controlled temperature (24 ° - 26 ° C). During the alcoholic fermentation, daily pumping is carried out which favors an optimal extraction of aromatic substances and dyes. When fermentation is almost completed, the wine is decanted in steel. The foam that characterizes "Vivace" is given by the presence of carbon dioxide obtained from the fermentation of the last residual sugars. Alcohol content: 13.5% vol. Organoleptic profile: ruby red with delicate purple reflections. "Vivace" has an intense aroma rich in sensations fruity. In the glass it is presented with a light foam that denotes its slight vivacity. Dry in the mouth, it is characterized by a pleasant acidity and good body. Pairing: excellent companion of snacks and "merende sinoire" it goes well with cold cuts and slightly seasoned cheeses, appetizers, soups, traditional first courses and white meats. But the main combination is the typical Piedmontese "bagna caoda" served in the classic "Fuiot", the particular terracotta stove. Serving temperature: 16 ° - 18 ° C
